A lot of women from our community are asking me for easy to make recipes that not only delicious but healthy too. So, this salad is just that! If you’ve never prepared anything in the kitchen, this Arugula salad will make you look really good – it’s simply easy and delicious.

But before we jump in the recipe, I’d like to mention a few things about arugula.

Arugula is a peppery, distinctive-tasting green that originated in the Mediterranean region. One study cites arugula as being particularly high in cancer-fighting agents. Beside reducing the cancer risk, preventing osteoporosis, diabetes and contributing to heart health, your liver (the master organ in Chinese medicine) loves arugula.

Arugula is low in sugar, calories, carbohydrates, and fat. It’s high in several vital nutrients:

Calcium, helps the blood to clot normally, important for bone health, muscle function (contraction of the muscle) and nerve function.

Potassium, a mineral and an electrolyte. Potassium levels often change with sodium levels. When sodium levels go up, potassium levels go down, and when sodium levels go down, potassium levels go up. This mineral is very important for people with high blood pressure.

Vitamin C, an antioxidant that helps support the immune system. Vitamin C is important for the absorption of iron from the food.

Vitamin K, helps with blood coagulation.

Vitamin A, powerful antioxidant, supports immune system, cell growth, eyes health, helps maintain kidney, lung, and heart function.

I always bought almond milk from the store before because it was easy and convenient. Yes, I knew, it wasn’t the best choice if you know how to read food labels. Even the thought of making my own nut milk made me feel uneasy because it required so much work, I thought.

Everything changed since I got my Ninja Hot & Cold Blender. I found the recipe for almond milk in the recipe book that came with the blender and decided to try it. To my huge surprise, the outcome completely shocked me in a good way. What the heck was I thinking before?

It’s super simple to make, requiring just 3 ingredients and a blender!

Making homemade almond milk starts with soaking almonds for 4-6 hours in water.

Then, the water is drained out and the almonds are added to a blender with fresh water, salt, and dates for sweetness (optional).

After blending the mixture for 2 minutes, the milk is poured through the strainer into a mixing bowl or nut milk bag. And then squeezed to extract all of the liquid.

And you have simple homemade almond milk that’s creamy, delicious, and healthy without any unnecessary ingredients! You are in control of your own recipe.

What’s mousse?

Mousse is a dessert that’s made of cream and eggs that have been whipped until they‘re light and creamy. … No wonder mousse is considered to be a comfort food and loved by many. In Old French, mousse means “froth,” but also, unappetizingly, “scum.”

If you have heavy cream, some eggs, and flavoring — plus a whisk or an electric mixer — you can make mousse. Most mousses are sweet, flavored with chocolate or fruit or nut butter, but it’s also possible to make a savory mousse, like a salmon mousse (here’s a new idea for my next recipe) or a chicken liver mousse.

Today, I will show you how to make a healthier version of chocolate mousse made from avocado but retains the amazing taste and texture of a real chocolate mousse. This recipe has no eggs, no sugar or diary and it’s gluten free.

Recipe:
2 Small Avocados – 1 avocado for 2 portions
1/3 Cup coconut milk – 2 tbsp + 2 tsp
3 Tbsp Cocoa Powder – 1.5 tbsp
3 Tbsp Honey – 1.5 tbsp
1/4 tsp shredded skin of orange
pinch of sea salt

Cut avocados in half and remove pip and skin.

Place into a food processor with the coconut milk, honey, cocoa powder, and 1/4 tsp of shredded skin from orange.

Blend until the mousse comes together. If you would like a thinner mousse consistency just add more milk. This mousse doesn’t taste like avocado at all.

Serve with your choice of berries or seeds of pomegranate. This mousse should last in the fridge for a few days.

Enjoy!

This recipe came from my childhood, to be exact from my baba Nina. And it still is a perfect fit for my diet in my 50s. It’s not only delicious, which is not good enough for me (if you know me) but healthy too. What I love the most, it’s so easy to put together. And you can use some left over mash potatoes.

Ingredients:

Boiled potatoes-5 (leftovers are great)

Onions -1

Red pepper (hot to taste)

Egg -1

Mayo -1 tbsp (replace with Greek Yogurt with lemon juice for healthier version)

S&P

Flour -3 tbsp (I used buckwheat, which is a gluten free flour, you can use regular flour if you want)

Ground meat – 1 pound (I used ground chicken)

Cheese as much as you want (you can use diary free cheese too)

How to:

1. Cook potatoes and cool down that it won’t absorb too much flour.

2. Mash the potatoes and add the egg, s&p, add flour and mix all together.

3. Chop the onions and mix with ground meat, add spice and 1 tbsp of mayo or Greek Yogurt with lemon juice and mix.

4. Prepare the dish for baking by laying parchment paper and spray it with oil

5. Take 2 tbsp of mashed potatoes and make it flat with a little grove in the middle like a little nest

6. Take meat mixture and add on the top of potato cakes

7. Sprinkle cheese on the top of each potato cake

8. Transfer to the over and bake at 180 Celsius for 20-30 mins

9. The best to eat when hot.

P.S. If you are using regular flour, not buckwheat, use only 2 tbsp.

I hope you are going to try this easy, delicious and pretty healthy recipe that the whole family can enjoy. And I think those nests look divine.

Everyone needs a good hearty soup for days when you don’t have time or don’t feel like cooking. But you still want something good for you meal fast on the table fast.

This Creamy Lima Bean and Kale Soup is healthy yet creamy and packed with flavor. It is my go-to version because it takes only 2 mins to cook in 1 pot (instant pot), it’s high in fibre and you use ingredients that you have in your fridge.

I use a lot of dry and fresh herbs and spices in my soup. Herbs and spices are some of the most powerful Detox Superfoods! For example, Rosemary was used in ancient times to purify the air and for its antiseptic properties. It is a well-established antioxidant and has been shown to prevent mutations in your DNA particularly in the liver and the lungs.

Ingredients

2 tbsp avocado oil
1 medium white onion, chopped
1 tsp fresh garlic, crushed
1 tsp fresh ginger
1 tsp dried rosemary, oregano
2 cups cubed sweet potatoes
1 litre Vegetable Broth
2 cup cooked lima beans (either soaked and cooked from dry or canned)
2-3 cup kale without the stems and in small pieces
Sea salt and freshly-ground black pepper, to taste

Directions

Put the oil in the pot, select SAUTE.

When the oil is hot, add the onion, ginger, spices and cook until it is just starting to caramelise

Add the garlic and cook for another minute or two.

Add herbs, sweet potatoes, carrots, lima beans and chopped kale.

Pour vegetable broth, salt and pepper.

Press CANCEL button to cancel SAUTE.

Lock on the lid, select the PRESSURE COOK function, and adjust to HIGH pressure for 2 mins. Make sure the steam valve is in the “Sealing” position.

When the cooking time is up, let the pressure quick release.

Using an immersion blender or a standing blender, blend 25% of the soup or to your liking.

Serve and enjoy!

Simple, delicious and good for your liver salad from red beets.

This beet salad with herring tastes fancy but it is SO EASY to make. It reminds me of my Russian heritage. Russians eat a lot of red beets and dishes from red beets are always part of any entertainment.

The health benefits of beets range from lower blood pressure to improved athletic performance.

Beets can improve cardiovascular health, decrease inflammation and lower blood pressure.

These red beauties contain high levels of natural nitrates, which are converted to nitric oxide within the arteries. This causes the blood vessels in the heart and organs to dilate, which lowers blood pressure and increases blood flow.

Beets are high in betalains, a group of cancer-fighting antioxidants. Betalains include betacyanins, which give beets their dark red and purple color. Betalains decrease inflammation by increase risk for chronic diseases like heart disease and cancer.

The phytonutrients in beets are also amazing for decreasing inflammation in the liver and kidneys, and perform the detoxification of these organs by increasing the production of glutathione, which is the body’s natural detox mechanism.

Did I convince you to start incorporating red beets in your diet?

And my liver lover red beet salad is a perfect recipe to start.

Here’s what you need:

✅ Ingredients

* Cooked and shredded Red Beets 300 gr

* Heering 100 gr

* Pickled Cabbage 100 gr

* Onions to taste

* Olive Oil to taste

* Dill and green onions

✅ Instructions:

1️⃣ Place beets in Instant Pot and cook for 15 mins or until soft. If you don’t have IP, boil or roast your beets until ready.

2️⃣ Shred beets, chop white onions, cut herrings in small pieces, chop dills and green onions.

3️⃣ Put all ingredients together in a bowl and mix. Drizzle over the salad olive oil or any oil you like. Serve and enjoy!

Devilled eggs are a hugely popular dish. They are served in different forms all around the world. Devilled eggs are very versatile and could be served as a snack, appetizer or a part of the meal.

To make this well known recipe more interesting, instead of using chicken eggs, I have used duck eggs.

Before jumping into the recipe, why don’t we cover the difference in nutrition and benefits of duck eggs vs. chicken eggs.

Eggs are a nutritious and affordable source of protein that humans have been eating for millions of years. In general, duck and chicken eggs are quite similar. Still, there are a few features that set the two apart.

A duck egg can be larger than an average-sized chicken egg. Thus, eating one duck egg is like eating one and a half or even two chicken eggs. Duck egg yolks are larger in size because duck eggs are generally larger than chicken eggs.

In general, duck eggs and chicken eggs taste similar. However, the flavor of duck eggs may be more intense than that of chicken eggs.

The yolk of a duck egg not only looks bold, but I think it gives the egg a richer flavor and creamier taste than chicken egg yolks.

Duck eggs and chicken eggs both have impressive nutritional profiles.

Duck eggs and chicken eggs are both packed with protein, fat, vitamins, minerals, antioxidants, and bioactive peptides that contribute in numerous ways to optimal human health.

Whether duck eggs or chicken eggs are better comes down to personal choice. There’s no right answer for everyone.

I’ve never tried duck eggs before but decided to give it a try and was pretty impressed with the outcome.

Cook Time

Prep time: 15 min

Cook time: 20 min

Ingredients

3 duck eggs

Instructions

Cook duck eggs for 7 minutes. Chill in cold water.

Peel eggs and cut in half.

A staple of Russia and the Slavic world, borscht has inspired films and novels – and has even reached outer space.

A single bowl of beetroot soup, served with smetana (sour cream) and black bread, bring up images of Red Square almost as much as a glass of vodka or red/black caviar.

Some claim that borscht is not Russian at all. But does it really matter?

Among the many soups of traditional Russian cuisine, borscht is undoubtedly the king of all soups. The borscht recipes are really numerous, every Russian family has their own version of borscht recipe. The traditional borscht can take up to 5 hours to make.

My borscht recipe takes only 5 minutes to cook. This recipe is gluten free, vegan and a perfect fit to detox the body!.

Borscht is eaten hot or cold. Many recipes counterbalance the sweetness of the beets with the addition of acidity like Vinegar, lemon juice, or citric acid can be added to achieve a similar effect.

There is no need to measure any of the veggies, it always turns out wonderful. So eyeball it! (Your food processor will come in mighty handy for shredding all these veggies!). I love to chop by hands, it’s the Russian thing.

Here are ingredient list for those of you who needs to follow the recipe.

INGREDIENTS:
2 cups shredded peeled beets
3 potatoes/1 cup of white beans (optional)
1 cup shredded carrot
1/2 cup chopped onion
2 gloves of garlic
1 cup of tomato sauce
2 tbls of tomato paste
2-3 liters of vegetable broth (water works just fine too)
I use 2 liters because I love it thick.
2.5 cups coarsely chopped green cabbage
2 tablespoons olive oil
2 tablespoon fresh lemon juice or ACV
Bay leaf, caraway, paprika, S&P
dill fresh or dried
sour cream/Greek Yogurt for serving

DIRECTIONS:

* Saute shredded beets, carrots, onion and garlic in the 2 tbsps of olive oil for 5-8 mins.
* Add spices and tomato paste and cook for additional 5 mins.
* Add vegetarian broth or water.
* Add cabbage, potatoes and cook for 5 mins in Instant Pot or 20-30 mins on the stove .
* When turning the heat off, stir in lemon juice or ACV (Russian secret ingredient). Add fresh dill.

It’s ready to eat. Borscht is better the next day!

You can keep borscht for a week in the fridge. When not detoxing add cubes of beef at the beginning, saute and then add beets, carrots, onion, and garlic.

The problem, they also contain some questionable ingredients, a ton of hidden sugar, and many also include pretty hard-to-find specialty items.

But not my recipe!

It’s fast, easy, and you might already have everything you need in your kitchen. It’s also gluten-free and can easily be vegan as well.

TIP: getting the skins off the chickpeas will make a big difference in the texture. It’s a little extra work but it’s worth it.

A quick method – rinse them in a colander, then spread them out on 1-2 layers of paper towels or a clean kitchen towel.

Place some paper towels over them and rub them back and forth vigorously. The peels should start to come off. Rinse and repeat!

Almond Chocolate Chip Edible Cookie Dough

Makes about 2 cups/16 servings

1 can (15.5 oz/440 grams) unsalted chickpeas, drained, rinsed, and peeled

1 cup (255 grams) almond butter

2 tbsp maple syrup or honey

1 tbsp vanilla extract

1 tsp sea salt

4 oz (115 grams) dark chocolate chips (at least 70% cacao)

(OPTIONAL) 2-3 tbsp melted dark chocolate

Place the first 5 ingredients in a food processor and pulse until the mixture is smooth and well-blended.

If you’re using the melted chocolate, blend it in, and then stir in the chocolate chips. Taste and adjust sweetness.

Scrape the batter into a jar or covered container and enjoy! (Tip: store this in the refrigerator – it’s extra-yummy when it’s cold.)

You could make this for yourself or your fam … OR you can put them in nice glass jars and give them out as holiday gifts!

Enjoy 🙂
