That time of warmth, sunshine, and all things the summer brings in is here! And it’s a perfect time for refreshing drinks. So today, I am whipping together a Skinny Piña Colada that capitalizes on that delicious pineapple and coconut taste without additional calories!
Let’s look at the health benefits of a pineapple and coconut first. I’m all about healthy and delicious food and drinks, boring food is not in my vocabulary. If you decided to drink alcoholic beverages, drink the best out there. This Skinny Piña Colada can be enjoyed virgin or alcoholic.
Pineapple Health Benefits
The vitamins and minerals in pineapple could help shorten viral and bacterial infections and strengthen your bones. The bromelain in pineapple, shows that it may help with chest pain, bronchitis, sinus infections, arthritis, blood clots, diarrhoea, muscle soreness, gout, lowering cancer risk and speeding up recovery time after surgery or intense workouts. In some cultures, pineapple is a medicinal plant due to the substance bromelain that may lower inflammation in the body. You can buy bromelain supplements over the counter. But it’s best to get your nutrients from food rather than pills.
Coconut Health Benefits
Coconut or coconut cream/milk/oil has saturated fat and contains 9 calories per gram as other fats. Rich in fiber and MCTs, it may offer a number of benefits, including improved heart health, weight loss, and digestion.
Using coconut cream/milk/oil for weight loss is not another “fad diet’. There are many PROVEN studies show that using coconut will help you to lose fat by replacing not so healthy fats in your diet with Coconut fats.
What makes this piña colada skinny?
The reason this piña colada is considered “skinny” is because I use frozen pineapple to get the juice. You get that perfectly balanced flavor that is in the traditional cocktail, but without all the calories from additional sugar in store bought juice.
You’ll need only 3 ingredients for alcoholic or 2 ingredients of virgin Pina Colada and less than 5 minutes for this delicious drink. Grab your blender and your favorite garnishes, and let’s make some piña coladas!
For this skinny Piña Colada recipe, you’ll need fresh or frozen pineapple chunks, unsweetened coconut milk, and rum (optional). You can also add in some shredded coconut or ice if desired.
After blending frozen pineapple for 2 minutes, the mixture is poured through the strainer into a mixing bowl. And then squeezed to extract all of the liquid.
Add remaining ingredients, blend one more time and your drink is ready!
INGREDIENTS
- 1 1/2 oz Malibu rum (optional)
- 1/4 cup coconut milk
- 1/4 cup fresh pineapple juice from 2 cups of frozen/fresh pineapple
- 1 cup ice (optional)
INSTRUCTIONS:
- Place frozen/fresh pineapple into the blender pitcher, I used Ninja Foodi Cold & Hot Blender.
- Select BLEND then HIGH and run for 60 seconds.
- Set a strainer over a bowl and pour the blended mixture into the strainer, then squeeze the juice out into the bowl.
- Add remaining ingredients with pineapple juice, blend one more time and…enjoy!
